Meet The Chef, Ewan Willis
Ewan is a passionate and driven chef whose culinary journey began at 16 years of age. With over a decade of experience in some of Asheville’s most respected kitchens, including Village Social at the Biltmore Estate, Vinnie’s Italian, and Luminosa at the Flat Iron Hotel, Ewan has honed a style that blends refined technique with heartfelt Southern sensibility.

Now, as the founder and executive chef of Trillium, he brings his vision to life—celebrating Appalachian ingredients with elevated, creative dishes that honor the region’s roots while pushing its culinary boundaries. His cooking reflects a deep respect for humble ingredients, transformed through thoughtful preparation and modern flair.

Trillium is the culmination of Ewan’s dedication to craft, community, and a cuisine that feels both familiar and new.


Dinner

Tucked into the forested slopes of the Blue Ridge, the trillium flower emerges quietly each spring — a rare and protected native bloom with three simple petals, three leaves, and a presence so pure it almost disappears into the woods. It asks for nothing, offers quiet beauty, and reminds us that the best things in life grow slowly and with care.


We named our restaurant Trillium to honor that spirit. Just as the flower rises faithfully from the mountain floor, our menu celebrates what grows close to home — seasonal ingredients harvested in their prime, prepared with intention, and served without excess. It’s a philosophy rooted in the land itself: let the ingredients speak, let the plates remain simple, let nature do the heavy lifting.

There’s an old Appalachian belief that true hospitality is wordless — it lives in the warmth of a fire, the gift of a shared meal, the pause of a rocking chair. We carry that spirit forward in every dish. Fresh, humble, and heartfelt, our food is a quiet welcome — an invitation to slow down, gather, and savor what this land has to offer.

Lodging guests will enjoy complimentary breakfast, which is included in theirs stay.  Our guests enjoy our classic made-to-order hearty fare including specialized sweet and savory crepes, omelets, unique pancakes, biscuits with sausage gravy, eggs Benedict, crispy bacon, sausage, southern grits as well as fresh fruit, homemade granola and yogurt.


Our ingredients are the freshest available and we strive to locally source. A stay at the Red Rocker Inn is ideal for any occasion whether a special celebration, a staycation or just passing through our historic town.
